What to Expect From Your Order and How to Prepare

  Buying a lamb share is a little different than buying a few cuts at the grocery store. Instead of selecting individual packages, you are receiving a portion of a whole animal that has been professionally processed and packaged for your freezer.Below is a general guide to help you understand what to expect and how to prepare.

How Much Meat Will I Receive?

Every lamb is different, but most finished lambs yield about 40–50% of their hanging weight

Quarter Lamb Share

Approximate packaged meat: 8–12 lbs


Typical cuts may include lamb chops, ground lamb, stew meat, and small roasts. This option works well for folks who want to try lamb without committing to a large quantity.


Half Lamb Share

Approximate packaged meat: 18–25 lbs


Typical cuts include rack of lamb, shoulder roast, lamb chops, leg steaks, ground lamb, and stew meat. This is one of the most popular options for families who enjoy cooking lamb regularly.


Whole Lamb Share

Approximate packaged meat: 40–50 lbs


Typical cuts include rack of lamb, leg of lamb roasts, shoulder roasts, lamb chops, shanks, ground lamb, and stew meat. A whole share gives you the full variety of cuts from the animal and the best value!

How Much Freezer Space Will I Need?

Lamb shares are surprisingly compact once packaged.

As a general rule:


Quarter lamb: about ¼ cubic foot of freezer space  

Half lamb: about ½ cubic foot 

Whole lamb: about 1 cubic foot


For reference, a standard 7 cubic foot chest freezer can hold several whole lamb shares. Most orders fit easily in the freezer space people already have at home.

What Is My "Cut Order"?

Cut Sheets allow you to select the animal cuts you desire

After reserving your lamb share, the processor will contact you to confirm how you would like your lamb cut and packaged. This is called your cut sheet.

The cut sheet allows you to choose things like:• thickness of lamb chops • roast sizes • whether you prefer more roasts or more ground lamb • packaging size (1 lb, 2 lb, etc.)
If you’re unsure what to choose, most processors offer a standard cut option, which works well for most families. Once your lamb is processed, the meat will be sealed, labeled, and frozen for easy storage and long shelf life.

Will the lamb taste gamey?

How long will the meat last in the freezer?

Is the meat frozen?

Yes. After processing, all cuts are vacuum sealed and frozen. This keeps the meat fresh, prevents freezer burn, and allows you to store it safely until you're ready to cook it.


Is the lamb grass-fed?

Our lambs are raised on pasture and forage as their primary diet. This produces meat that is flavorful, nutrient-dense, and raised the way lamb has traditionally been produced.


How is the meat packaged?

All cuts are professionally vacuum sealed, labeled, and frozen. Packages are typically portioned in convenient sizes so they are easy to store and use.


What if I don’t know how to cook lamb?

Lamb is actually very easy to cook and incredibly versatile. Many cuts cook just like beef, and simple recipes such as lamb chops, grilled leg steaks, or slow-cooked roasts are easy to prepare at home. We also provide cooking suggestions and recipes to help you get the most out of your lamb share. If you’ve never bought meat this way before, you’re not alone.
